Minty Watermelon Ice

Even though it’s fall, it’s still blisteringly hot.  But thankfully, the watermelon is as sweet right now as the weather is hot.  This frozen dish should cool you down in no time!

3 cups watermelon

1 drop spearmint oil

 

Freeze the watermelon for 4 hours or overnight.  Watermelon actually freezes quite well for slushies, so you can chop up a bunch to leave in there for when it’s not in season.

Blend the frozen watermelon with 1 drop of spearmint oil.

When you’re done, it will be scoopable like ice cream but have a soft serve texture and is super yummy.

Orange infused fruit salad. Orange essential oil adds a tangy, citrus flavor to a healthy fruit salad. Try it for an easy addition to a summer meal.
Ingredients
  • 2-3 Tbsp Blue Agave
  • 3-4 Drops Orange Essential Oil
  • 1 1/2 Cups Blueberries
  • 1 Cup Peaches, cut into pieces
  • 1 Cup Grapes, halved
  • 2 Cups Strawberries, quartered
  • 2 Kiwi, cut into large pieces
  • 2 Bananas, sliced
  • 4 Mint leaves, cut (optional)
Instructions
  1. Mix agave and orange essential oil in a separate container and place to the side, allowing the flavor of the orange oil to infuse into the agave. Rinse fruit and place in a large bowl, except for bananas. Add bananas just prior to serving to prevent discoloration. Drizzle agave mixture over fruit and gently fold mixture until fruit is saturated. Cover and chill for 10 minutes.
  2. Rinse mint leaves and dry thoroughly. Place mint leaves on top of each other and roll tightly. Shred mint leaves with kitchen scissors. Add shredded mint leaves to fruit and gently fold. Cover and chill for an additional 5 minutes. Makes 9 servings.

Roasted Chicken seasoned with rosemary oil.
Ingredients
  • 1 Whole Chicken
  • 2 Tbsp Olive Oil
  • 1 Cup White Wine
  • 1 Drop Lemon Oil
  • 4 Drops Rosemary Oil
  • 4 Cloves Garlic, minced
  • 1 Small Onion, minced
  • 1 Tsp Black Pepper
  • 1 Tsp Salt
Instructions
  1. To prepare the marinade, add all of the ingredients except chicken and olive oil to plastic bag.
  2. Place chicken inside bag and close bag tightly, making sure that there is no air in the bag. You want the marinade to completely cover the chicken.
  3. Let it marinade for an hour or two.
  4. Heat oven to 425 degrees. Place chicken in pan. Add marinade. Pour olive oil on top of chicken. Bake for about an hour, basting every 15 minutes.
  5. Garnish with fresh rosemary, if desired.

Here is a savory marinade recipe for meat or tofu. Be careful when letting the essential oils drop that you don’t get too many drops as the flavor is very concentrated.

1           Cup            Red Wine

2           Cloves       Garlic (crushed)

1           Small         Onion (diced)

1           Drop           Thyme Essential Oil

1           Drop           Marjoram Essential Oil

1           Drop           Clove Essential Oil

2           Tbsp           Olive Oil

1           Drop           Orange or Mandarin Essential Oil

Salt & Pepper to taste

 

Mix all ingredients. Brush on meat or tofu.  Let marinate for at least 6 hours or overnight.
